Lecithin Composition




Lecithin is mainly composed of glycerol skeleton, a phosphate group, two fatty acids (the number of carbon atoms is usually even, such as 16,18,20, and often contains unsaturated fatty acids), and head groups of different polarity. Among them, lecithin, according to the different polar group head and including phosphatidyl choline (PC, that is, in a narrow sense of lecithin, choline) and phosphatidyl ethanolamine (PE, also called cephalin, ethanol amine molecules), phosphatidyl inositol (PI, inositol molecules), phosphatidylserine (PS, serine molecules), phosphatidic acid (PA) and double phosphatidyl glycerol (DPG, Cardiolipin).
