Definition of lecithin




Lecithin is a mixture of glycerol phospholipids. Therefore, the term lecithin has broad and narrow definitions. The broad definition of lecithin is a general term for all phospholipids including lecithin, cerebral lecithin, inositol phospholipid and serine phospholipid. The narrow definition of lecithin is the common name for the chemical phosphatidylcholine.
